What it does

This calculator turns your ingredient costs and recipe yield into a defensible menu price. Enter each ingredient's as-purchased (AP) price, pack size, quantity used, and yield %, set your servings and target food-cost %, and it returns the cost per serving, a suggested menu price (math and charm-rounded), the resulting food-cost %, your gross profit, and a healthy-band verdict — all calculated privately in your browser, free.

How to use it

  1. Name the dish and set the number of servings the recipe makes.
  2. For each ingredient, enter the AP price (what you pay the supplier), the pack size that price buys, the quantity used in the recipe (same unit as the pack), and the yield % (usable portion after trim/cook loss; 100 = no loss).
  3. Set your target food-cost % (full-service usually targets 28–35%).
  4. Read the suggested price and food-cost %. Optionally type a proposed menu price to back-solve your actual food cost and see if you're leaving money on the plate.

Worked example

A burger recipe that makes 1 serving:

Total recipe cost ≈ $3.23. Cost per serving ≈ $3.23. At a 30% target: $3.23 ÷ 0.30 = $10.77 math price, charm-rounded up to $10.99. That's a 3.33× markup and a ~29.4% food cost at $10.99 — squarely in the healthy band.

EP unit cost   = unit cost / (yield % / 100)
line cost      = EP unit cost * quantity used
recipe cost    = sum of all line costs
cost/serving   = recipe cost / servings
suggested price= cost/serving / (target % / 100)
food cost %    = cost/serving / menu price * 100
gross margin % = 100 - food cost %

How do I calculate the cost per serving of a recipe?

Sum every ingredient's line cost (EP unit cost × quantity used), then divide that total recipe cost by the number of servings.

How do I set a menu price from food cost?

Suggested price = cost per serving ÷ (target % ÷ 100). $4.56 ÷ 0.30 = $15.20, a 30% food cost and 3.33× markup.

What is a healthy food-cost percentage?

Full-service usually targets 28–35%. Fine dining 25–32%, fast-casual 28–32%, bar/liquor 18–24%. Set your own band.

Why does yield percentage matter?

Yield % is the usable portion after trim and cooking loss. EP cost = AP cost ÷ yield %. Costing at 100% undercosts proteins and produce.

Does this include labor and overhead?

No — food cost only (ingredients). Labor, overhead, packaging, and waste beyond yield must be added separately for true plate cost.

Accuracy notes & disclaimers

This tool prices food cost only (ingredients). It does not include labor, overhead, packaging, waste/spillage beyond yield, or comps — true plate cost and breakeven require those. Food-cost % is one lever, not the whole P&L.

The 28–35% band is a full-service convention. Fine dining often runs 25–32%, fast-casual 28–32%, bars/beverage much lower (18–24% on liquor). Set your own target.

Yield % matters most for proteins and produce (trim + cooking shrink). Costing at AP (100% yield) systematically undercosts these items; EP costing is the accurate method.

An item-level food-cost % is a planning/theoretical number. Your real-world period food cost — (Opening + Purchases − Closing) ÷ Sales from inventory — will differ due to waste, theft, over-portioning, and price drift, and is the figure lenders and investors care about.

A suggested price is a starting point, not a market guarantee — competitor pricing, perceived value, and menu psychology also drive what a dish can command. Supplier prices move, so re-cost recipes whenever invoices change. All figures are estimates for internal pricing decisions, not accounting or tax advice.
