What it does

This free generator builds an inspection-ready opening and closing SOP tailored to your venue. Pick your establishment type and a few toggles and it renders the right task blocks grouped by Front of House, Back of House, and Manager, in a fixed sequence, each with a checkbox, an initials field, and a timestamp. It adds a per-unit refrigeration & holding temperature log (PASS/FLAG against the FDA Food Code 41°F / 135°F thresholds, with a required corrective-action box on every flag), optional two-stage cooling log rows with live deadlines, and a cash-drawer reconciliation panel per register with an all-register rollup. A headline status banner tells you in one line whether you are cleared to lock up / shift-ready or still have open flags. Everything runs privately in your browser.

How to use it

  1. Choose your establishment type (this is the single biggest factor in which tasks apply) and whether to generate Opening, Closing, or Both.
  2. Set the toggles — full kitchen gates the hot-line, hood and fryer tasks; TCS food gates every temp and cooling log; serves alcohol adds liquor lockup and keg/bottle tasks.
  3. Enter how many refrigeration units to log and how many registers you run. Open the optional panel to change cash float, tolerance, temperature targets, or add custom tasks.
  4. On shift, tick each task and type the actual degree reading for every unit (not "OK"), add initials, and fill the corrective-action box on any FLAG.
  5. For closing, enter each drawer's cash sales, paid-outs, drops, and counted cash — the tool computes expected, variance, and the deposit. The sign-off line stays locked until every task is done, every temp recorded, and every drawer reconciled.
  6. Use Copy result, the share link to reload your setup, or print to a dated PDF as your record.

This tool generates an operational SOP checklist and does deterministic arithmetic (cash variance, temp pass/fail, completion %). It is not a substitute for your local health code or a Person-in-Charge's judgment. Temperature thresholds default to the FDA Food Code 2022: cold-holding ≤41°F, hot-holding ≥135°F, two-stage cooling 135→70°F within 2 hours and 70→41°F within 6 hours total; freezer ≤0°F is an industry standard. State and local jurisdictions adopt the Food Code with amendments — some still use 45°F cold-holding for certain items or shorter cooling windows — so confirm your county thresholds and override the targets above if needed. TCS = Time/Temperature Control for Safety food (dairy, cooked rice, cut leafy greens, proteins); the danger zone is 41°F–135°F, where pathogens can roughly double every 20 minutes. The cash tolerance ($1–$5) is a common operational norm, not a legal standard — your own loss-prevention policy governs. Cash sales must come from your POS cash-tender total, not gross sales (which includes card, gift and comps); using gross sales will falsely show every drawer as massively short. The tool is fully client-side — nothing is sent anywhere and nothing persists after the tab closes unless you export or print; it cannot track trends across shifts or store yesterday's logs, so print or save each completed checklist as your record. Inspectors specifically look for the corrective-action field on out-of-range temps and for initials and timestamps — this tool requires them, but you must actually fill them in.

What temperature should a restaurant fridge and freezer be?

Under the FDA Food Code 2022, cold-holding for TCS food is ≤41°F and hot-holding is ≥135°F; freezers are an industry standard ≤0°F. The tool marks each per-unit reading PASS or FLAG and requires a corrective-action note on every flag. Confirm your county thresholds and override the targets if your inspector uses a different number such as 45°F.

How do you balance a restaurant cash drawer at closing?

Expected = opening float + cash sales − paid-outs − drops. Variance = counted − expected; within tolerance ($1–$5) it balances, beyond it flags for a manager. Use only the POS cash-tendered total, never gross sales. The deposit = counted − float, because the float stays in the drawer.

What is the two-stage cooling rule?

Cooked TCS food must cool 135→70°F within 2 hours (Stage 1), then 70→41°F within 6 hours total (Stage 2). Miss Stage 1 and you must reheat to 165°F and restart, or discard — you cannot just keep cooling. The tool shows live deadlines and forces a reheat-or-discard decision.

Why does the checklist block sign-off when a temperature is blank?

A blank reading shows as NOT RECORDED, never a pass or 0°F, and it blocks sign-off — a missing per-unit reading is the #1 thing inspectors cite. Logging "OK" or a checkmark instead of a degree number also fails; a number is required.

Can I customize the checklist for my own routine?

Yes — establishment type gates the right blocks (a cafe skips the hot line; a bar adds liquor lockup), and the custom box lets you add owner-specific tasks one per line, optionally tagged FOH, BOH, or MGR, so the routine survives staff turnover.
